377. Chinese Yam

There’s not much to say about the taste itself, slightly sweet, with a somewhat viscous texture and a faint caramel aroma. If eaten directly, soaked Chinese yam is not as transparent as boiled; the degree of “revival” is somewhat limited, and you can still feel that it was once dried in the sun.

Bitter with a bit of sour astringency, tastes awful.
